Daniel Gastalver is part of the new breed of Spanish chefs who focus on
good product, the finest ingredients sourced from local markets and
suppliers resulting in distinctive flavours free from hidden additives
without the need for fancy garnishes who are taking the culinary world
by storm. Born in Seville, where his father was famous for inventing new
dishes and flavour combinations in the family restaurant, he trained in
San Sebastian before heading to Barcelona and eventually to Ibiza, where
he has adopted his father’s style in his own kitchen.
